Amaretti (Italian Almond Cookies)

Oven 300 degrees, lightly greased cookie sheets

makes about 2-1/2 dozen

2 egg whites

1 1/2 cups almonds, finely ground up in food processor

1 cup confectioners 10XXXX sugar

1/4 teaspoon salt

1 teaspoon almond extract

1/2 teaspoon vanilla extract

1. place the egg whites and salt in mixing bowl, set aside to bring to room temp, about 20 minutes

2. In another bowl, combine almonds and sugar, mixing well

3. Beat the egg whites until stiff peaks form

4. gently fold the almond mixture into the beaten egg whites

5. gently fold in the almond and vanilla extracts

6. drop by small spoonfuls onto prepared cookie sheet

7. bake 20 minutes, until light brown

8. let cool completely before storing in an airtight tin.
