Another great desert with the added benefit of Anti-Oxidant Blueberries. (A stretch – Like diet soda with a piece of pie)
Ingredients
- 1/4 cup Shortening
- 1-1/2 cup Sugar
- 2 Eggs
- 1/2 cup Milk
- 1 teaspoon Vanilla
- 2-1/2 Cup Flour
- 1 teaspoon Cream of tartar
- 1/2 teaspoon Baking soda
- 1 pinch Salt
- 1 pint Fresh blueberries
- Confectionary sugar
The simplicity of the cake:
Cream shortening and sugar. Add eggs. Beat well. Add milk and vanilla. Mix well. Sift together flour, cream of tartar, baking soda, and salt. Add to batter. Mix well. Fold in blueberries. Pour into greased 10-inch tube pan. Bake at 350-degrees for 55 to 65 minutes. Cool. To Serve: Sprinkle with confectionary sugar.
