Very easy and tasty Cherry Streusel Cake.
Ingredients
- 1 cup Butter
- 1 cup Sugar
- 2 Eggs
- 2 cups Sifted flour
- 2 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1 can (1-lb 6-oz) Cherry pie filling
- 2 tablespoons Butter
- 1/4 cup Sugar
- 1/4 cup Flour
The Procedure:
Cream 1 cup butter and 1 cup sugar until light and fluffy. Add eggs. Beat thoroughly.
Sift together 2 cups flour, baking powder, and salt. Add to creamed mixture. Blend (batter will be thick).
Spread 3/4 of batter into a buttered 9”x13”x2” pan.
Spread pie filling on batter.
Drop remaining batter by spoonfuls over filling, spread gently.
Blend 2 tablespoons butter, 1/4 cup sugar, and 1/4 cup of flour until mixture is crumbly. Sprinkle mixture evenly over batter.
Bake at 350-degrees for 45 minutes.
Cool slightly. Cut into squares.
Serve: Warm or cold with whipped cream, ice cream, or plain.
Makes: 12-16 servings.
