1 to 2 packages of flour tortillas
1/4 cup sugar
2 tbs cinnamon
Mix the cinnamon and sugar together.
Cut tortillas into pieces. I cut 6 inch tortillas into 6 pieces across the center.
Put cooking oil into a fryer, a 5-quart pot or Dutch oven and heat to 365 to 375 degrees F. Gently lower the chips, 5 to 6 at a time, into the oil and fry for 20 to 30 seconds. Using a slotted spoon or spider, remove the chips to a paper towel-lined sheet pan.
Sprinkle with sugar and cinnamon mixture, toss and sprinkle other side.
Allow them to cool 3 to 4 minutes before serving.
