There is nothing like good comfort food. This is one of my comfort foods. Chesapeake Bay Crab Cakes
INGREDIENTS:
- 1 pound Crab meat (jumbo lump)
- 1 tablespoon Parsley flakes
- 10-12 Saltine crackers, crushed
- 1 Egg
- 1 tablespoon Miracle Whip salad dressing
- 1/2 tablespoon Worcestershire sauce
- 1/2 tablespoon French’s Mustard
- 1 teaspoon Old Bay seasoning
- 1 tablespoon Baking powder
- 1/2 cup Vegetable oil
Put crab meat in a bowl. Sprinkle with parsley flakes and Saltine crackers. Mix while being careful not to break up pieces of crab meat.
In a separate bowl mix (using a whisk) egg, salad dressing, Worcestershire sauce, mustard, and Old Bay seasoning.
After this is mixed well, add baking powder, mixing well.
Add the wet mixture to the crab meat, mix well to cover crab meat.
Make into 5-6 crab cakes. Refrigerate for 1 hour before cooking.
Fry in about 1/2 cup of vegetable oil’
Drain and let rest for 2 minutes before serving.
