Lasagna Noodles

I usually bought lasagna noodles until I started making them.  They are not really hard to make and they  make the lasagna taste so much better.  It is a matter of pulling out the pasta machine and having a little more time to make the noodles.Lasagna Noodles

Ingredients:

  • 1 lb of flour
  • 5 eggs
  • a pinch of salt
  • drizzle of olive oil

Make a mound of the flour and hollow out a hole in the top.  Crack the 5 eggs into the top of the mound and mix it together to make the dough.  Kneed into a dough and drizzle about 1 tbs of olive oil over the dough and kneed some more.  The dough will get elastic.  Roll into a ball and cover with a tea towel for about a half an hour to rest.

 

Cut the ball into 4 pieces and then press down.  Roll out on #1 and fold over and roll again.  Roll out on #2 through  5, the width of the rollers.  when you get to 5 cut the length of the pan.

Cook in a pan one or 2 at a time for 2 to 3 minutes and then lay on paper towels.  Now you can put them together into the lasagna.

Let rest for 1/2 hour under a Tea Towel

Cut into 4 quarters:

Roll out with a pasta machine:

Start at 1 and then roll until you get to 5

Lay out the pieces and cut into pieces that will fit the pan
usually 2 pieces per layer so you will need 6 per pan
When I cut them into 3 pieces, i can make 2 pans of
Lasagna (12" x 16")
