Simple Oatmeal Cookie Recipe with a twist. Oatmeal Lace cookies are elegant and tasty.
These cookies show well and taste great.
1/2 cup butter
1 cup sugar
1 tsp vanilla extract
3 tbsp flour (Not a lot for the recipe)
1/4 tsp baking powder
1/2 tsp salt
1 cup rolled oats
Makes approx. 4-1/2 dozen cookies.
Cream butter; gradually add sugar. Add egg and vanilla extract; mix thoroughly. Combine dry ingredients and add to creamed mixture. Mix thoroughly.
Drop by rounded teaspoon on parchment covered cookie sheet spaced approx 3 inches. (Make sure to keep the drops round, or the cookies won’t be of consistent thickness.) Bake approximately 8-10 minutes or until light brown, at 350 degree oven.
Remove parchment to counter and allow cookies to cool slightly. Pull parchment over edge of counter until it separates slightly from the nearest row of cookies. Work a nylon spatula under each cookie; push the spatula forward while wiggling it side to side. When cookie comes loose, use spatula to move it to cooling rack.
Note to end user: These break pretty easily. They are not for shipping to the family across the US or they will have lots of little pieces in the box. Lessons Learned!!!!
