Pasta Fagioli – Like Old Times

by Technocook on January 31, 2009

Growing up ion a blue collar Italian family, we never had a lot but never thought we were missing Pasta_Fagioli_4 anything.  Dad would work in the steel mill and mom taught school for a bit.  We ate like royalty.  One of the dishes we had regularly was an old version of Pasta Fagioli made with noodles and kidney beans.  I later found out that this was the Italian Ramen Noodles of the day (For those of us that were starving college students you will remember that.)

Here is a simple recipe that takes about 30 minutes to prepare and has a great taste that reminds me of growing up.

Ingredients:

  • 6 1/2 cups of water
  • 2 cups of your favorite red sauce
  • 1 lb box of Ditalini
  • 2 cans of Kidney beans – rinsed and drained
  • 1 Tbs of Oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp white pepper
  • 1 tsp granulated garlic
  • 1 Tbs Basil
  • 2 Tbs Parsley
  • 2 Tbs of Olive Oil

Put it all into a pot on the stove and put it on high.  Stir it regularly combining all of the ingredients.

That’s all there is to it.

The pasta will get plump and the herbs and spices will infuse into the mix.  Ladle it into a bowl and top with some of your favorite shake cheese.

I’m Home!

Enjoy

I just drooled on my computer. Looks like what Grampa used to make.
