This is one of my favorites at Thanksgiving and because it is so rich I only do it at thanksgiving. I find
myself wanting to eat it instead of dinner. Great cold with a little vanilla ice cream on top. Mmmmmm.
1 unbaked 9-inch pie shell (Roll out ones from the dairy case works well)
1 1/2 cups pecans pieces
1 cup semi-sweet chocolate chips (no nibbling)
4 eggs, beaten
1/2 cup sugar
1/2 cup light brown sugar
1/4 cup percent Pure Cane Syrup
1/4 cup corn syrup
1/2 teaspoon vanilla
Pinch of kosher salt
Preheat the oven to 375 degrees.
Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell.
Whisk the remaining ingredients together in a mixing bowl.
Pour the filling over the pecans. Bake for about 1 hour or until the filling is set. (a little shake will tell if it is)
Cool for 10 minutes before slicing. (if you can wait it is so much better!!)
