A simple home-made-tasting Chicken Cacciatore.
- 2 to 3 pounds Chicken thighs
- 1/4 cup Olive oil
- 2 to 3 Green peppers, sliced in strips
- 1 large Onion, sliced
- 2 to 3 cloves Fresh garlic, chopped
- 1 package Fresh mushrooms, sliced in half (Or two, 6 ounce cans sliced mushrooms, drained)
- 2 (26 ounce) jars Marinara sauce
- 3 to 4 cups Cooked white rice
Cook chicken in a 1/4 cup of olive oil until cooked and brown, about 20 minutes. Remove from pan. In same pan (may need to add more olive oil) put green peppers, onions, garlic, and mushrooms. Cook until tender. Add marinara sauce. Mix well. Add chicken and heat (reduce heat to simmer) covered for 20 minutes until hot.
Serve over white rice.
Makes 3 to 4 servings.
