Really Cool Crepes

One of the simplest and yet most elegant meal is crepes.  It is a very thin pancake that is filled with Really Cool Crepes some wondrous goodness.  My very favorite crepe shop is in San Francisco and is near China Town.  They make the crepes in the window and then fill it with great stuff.

My favorite filling is Nutella and Bananas and topped with whipped cream.  Wow.

This is the closest thing to that wonderful tasting stuff is to make it at home.  It is a little more work than buying it at the store but it isn’t too hard.

Ingredients:

1 cup of all purpose flour
2 eggs
1/2 cup of milk
1/2 cup of water
2 Tablespoons of Butter
1 tablespoon of sugar (Optional for desert type crepes)

Whisk the ingredients together in a bowl and set it aside to rest for about 5 minutes.

Take a pan that is 8 to 12" in diameter (Non-stick is preferable) and prepare it with a light spray of non stick spray and a paper towel.

When the pan is hot, then you can lightly spray the pan again and ladle the batter into the pan and rotate the pan to coat the bottom lightly.  (this is to make them thin)

When the first side of the crepe is slightly browned, use a spatula to lift one corner and then flip the crepe over.  I use my hands with latex gloves (this keeps my hands from getting burned from any spray that is on the bottom of the crepe)

Cook the other side and then move it to a plate and fill with your favorite filling.

Some suggestions for filling:

Scrambled eggs, ham and cheese
Cooked crab meat, bread crumbs, parmesan cheese and mushrooms
Apple Pie filling (Or any other such as cherry and more)

Top with sour cream, Whipped cream, hollandaise sauce or other great sauce or topping.
