Spinach Frittata

One of my favorite spinach side dishes was made by mom for years.  It was a way to get us Spinachh Fritatta to eat our spinach.  To make it is as easy as mixing pancake batter and to fry it up is about the same.  Give it a try,

Ingredients:

  • 1 tbs olive oil
  • 1/2 tsp garlic powder
  • 1 tbs Romano cheese
  • 1 tbs Parmesan
  • 1/4 tsp ground spicy pepper
  • 1 tbs parsley
  • 1 tsp basil
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 4 eggs
  • 2 pkgs frozen spinach (or a large bag of fresh – about 20 oz cooked)
  • 2 tbs red  sauce (spaghetti sauce, ketchup in a pinch)

Cook the spinach  and drain well.  (squeeze it out if you so feel inclined)

Then mix all the ingredients together in a bowl.

Heat oil in a fry pan and add garlic.  Brown lightly and then pour in the ingredients.

Cook on each side about 4 to 5 minutes or until golden brown. (Medium to medium-high heat)

Flip the pie and cook the other side for about 4 minutes more.

Oil and Garlic in a pan and brown the garlic:

Pour the ingredients into the pan and cook for 4 to 5 minutes on medium heat shaking occasionally:

Turn the frittata with a spatula and a flip of the wrist: (Over the sink in case you miss – happens every once in a while to the best of us)

Let it set to 5 minutes off of the heat and cit to serving slices.  You can also move the entire frittata to a plate and garnish it to serve at the table.
