This is a really tasty pre dinner treat. I usually use a little less bread crumbs and a bit more parmesan cheese. The mushrooms get a little brown and a tad crispy on the top.
INGREDIENTS:
• 12 to 14 fresh large mushrooms
• 2 cans of crab meat
• 1/2 cup softened butter
• 3 tablespoons finely minced onion
• 1/2 cup fresh bread crumbs
• 1/2 teaspoon salt
• dash black pepper
• dash ground cayenne pepper
• Parmesan cheese
PREPARATION:
Clean the mushrooms and remove stems, leaving caps whole (Dig out a little in the cap for a space).
Sauté the onions and crab meat in 3 tablespoons of butter and set it aside. Stir in bread crumbs, salt, pepper, and cayenne pepper until well mixed. Stuff each mushroom cap with crab meat and bread crumb mixture; sprinkle each stuffed mushroom with a little Parmesan cheese. Place stuffed mushrooms on a greased baking dish. Bake at 325° for 15 minutes. Stuffed mushrooms serve 6-8.
Use a spatula to pick up the mushrooms since they are soft and may break if you use your fingers. (Plus they are hot and may burn you)
