Zucchini Sausage Soup

Great on a cold day.  This is a zesty treat.

Ingredients:

  • 1 pound Italian Sausage
  • 1 tablespoon dried basil
  • 2 teaspoons dried oregano
  • 2/3 cup chopped onion
  • 5 cups water
  • 2 medium zucchini, sliced
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 jar (14 ounces) pizza sauce
  • 3/4 cup uncooked orzo pasta
  • 1 envelope au jus gravy mix

Putting it Together:

  • In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink and then drain.
  • Stir in the remaining ingredients. Bring to a boil.
  • Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender.

Serve with a little fresh grated parmesan cheese.
